Red Wine Vinegar Substitute

Vinegar is very high in amines, so I have come up with vinegar substitutions that are amine-allergy friendly. These vinegar substitutions are low amine, delicious, and easy to make. Blueberry juice does not give me problems, but please be aware that though it is low in tyramines, it is high in histamines. Use if your diet will allow for it, otherwise opt for an unsweetened pomegranate juice.
Red Wine Vinegar
  • 1 Tbsp blueberry juice
  • 1 tsp vodka
  • just shy of 1/2 tsp ascorbic acid
  • 1/4 tsp loosely packed brown sugar
AMINE BREAKDOWN:
Very Low Amine: ascorbic acid
Low Amine: vodka, brown sugar
High Amine: blueberry juice (low in tyramines, high in histamines)

Malt Vinegar Substitute

Malt Vinegar
  • 2 Tbsp apple juice
  • 1 tsp ascorbic acid
  • 1 tsp lime juice
  • 1/4 tsp honey

Low Amine: honey, apple juice
Very High Amine: lime juice

Balsamic Vinegar Substitute

  • 4 Tbsp blueberry juice, reduced over high heat to 2 Tbsp
  • 1/2 tsp ascorbic acid
  • 1/4 tsp molasses
  • 1 tsp vodka
  • 1/4 tsp lime juice

Low Amine: molasses, vodka
High Amine: blueberry juice (low in tyramines, high in histamines)
Very High Amine: lime juice

I require a lot of protein to make it through my days because I’m pretty active. This low-amine shredded beef recipe is easy and very satisfying. The flavors meld together in a slightly Mexican / Indian direction. I did not make the low-amine shredded beef spicy at all out of courtesy to my Sugar (he doesn’t do face-meltingly, mind-numbing spicy foods like I do), but if you can handle the heat, this recipe is just BEGGING to be spicy. For fully gluten-free, use gluten-free bread, gluten-free tortillas, or lettuce or cabbage wraps.

3 lb bottom sirloin roast (low-amine beef roast)

1/4 C safflower oil

4 medium onions, quartered

1 large shallot, diced

10 cloves garlic, pressed

3/4 C applesauce (unsweetened)

2 C beef broth

1 large bunch parsley (stems discarded), minced

Celery heart and bitters, minced

3 bay leaves

2 Tbsp savory

2 Tbsp marjoram

1 tsp cinnamon

1 tsp salt

4 Tbsp cumin

1 Tbsp coriander

1/2 tsp ascorbic acid

1 C cilantro, minced

Habanero, Cayenne, or Jalapeno, if you can take the heat. To taste.

  • If beef roast has kitchen twine around it, remove and discard twine.
  • In a large stock pot, add all ingredients except cilantro. Turn temperature to medium high and once to temperature, reduce to a simmer.
  • Simmer for 3 hours.
  • Remove bay leaves.
  • Remove low-amine beef and set on large cutting board.
  • Using two forks, shred beef. Set aside in a large bowl.
  • Use an immersion blender (or food processor, in batches) to blend onions, parsley, and remaining low-amine stock pot ingredients. Blend until very smooth.
  • Add cilantro to beef, and add in puree one spoonful at a time until desired consistency is reached. Any left over can be saved for cooking with beans, as the base of a low-amine soup, served over rice, or more.
  • Mix beef, puree, and cilantro together well and serve on toasted Ciabatta rolls, gluten-free hamburger buns, lettuce wraps, over rice, or however desired.

Making a juicy burger is always a treat, especially with summer and grilling season upon us. But plain ‘ol hamburgers get a little boring, so I thought I would spice things up by making them low-amine Cajun Burgers and serve them up hot with caramelized onions. Delicious!

1 lb lean ground beef

1 Tbsp Cajun Seasoning Mix

1 1/2 Tbsp gluten-free breadcrumbs

1/4 tsp salt

2 Tbsp egg whites, beaten

1 Tbsp safflower oil

1 large sweet onion

2 Tbsp butter (or butter substitute for dairy-free)

3 gluten-free hamburger buns (depending on size of bun and whether you like your burgers super thick or “normal” patty thickness)

Condiments of choice: low-amine no-tomato ketchup substitutelow-amine no-tomato BBQ sauce substitutelow-amine mayonnaise

  • Mix beef, Cajun Seasoning Mix, breadcrumbs, salt, egg whites, and safflower oil together in a bowl. Knead until well mixed.
  • In a cast iron pan, heat butter and add sweet onion cut into “C” shaped rings.

  • On low heat, cook onions slowly and stir often to slowly caramelize. When caramelized, set aside and turn grill on high.
  • Turn grill to medium high and form beef into burger patties about 5″ across.
  • Grill until desired doneness. Flip burger when patty unsticks from grill easily – you should not have to scrape it off the grill, as the natural oils will allow the burger to “let go” of the grill when it’s ready.

Pumpkin Apple Dressing

Low-Amine Pumpkin Apple Dressing.

This slightly sweet dressing is slightly reminiscent of pumpkin pie and has a lightly tangy kick to it. It goes well on salads as well as being used as a sauce for meats such as chicken.

1/2 Fiji apple

1/2 C water

1/2 C organic pumpkin puree

dash clove powder

1/8 tsp cinnamon

1/8 tsp salt

2 tsp sugar

3/4 tsp ascorbic acid

1 tsp rubbed sage

2 Tbsp safflower oil

  • In a food processor, puree apple.
  • Add all other ingredients and puree until very smooth.
