Low-Amine Junk Food! Mac and Cheese (low-amine, gluten-free)!!!

Well, it’s not exactly Mac n Cheese, but that’s because I didn’t have the right noodles. It’s “SNOWPOCALYPSE 2012” here in Seattle, so going out and getting anything is just out of the question. There’s more than three inches of snow on the ground, so the entire city has come to a halt (to be fair, we panic and shut down at about a half inch of snow). However, it’s a totally fair substitute for Mac n Cheese, and made me very happy. Total junk food, but at least it was low-amine junk food!

Pasta noodles (whatever kind and amount your heart (and stomach) desires. I use Quinoa Noodles, as they’re gluten-free)

1/2 C cream cheese

1 Tbsp safflower oil

4 cloves garlic, chopped roughly

1/4 tsp salt

1/4 tsp black pepper

Parsley flakes for garnish

Low-Amine Mac and Cheese is so easy ANYONE could make it.

  • Boil water for noodles, and drop them in when the water is hot.
  • Heat oil in small pan on medium high. Add garlic and cook till starting to brown. Remove from heat.
  • Add cream cheese to garlic and mix together well. Add salt and pepper and mix.
  • Drain noodles when done.
  • Return noodles to original pan and add cream cheese mixture.
  • Mix well.
  • Serve, sprinkled with a little black pepper, salt, and parsley (if available).
  • Enjoy your low-amine junk food, whether you’re snowed in or not!


Very Low Amine: quinoa noodles, garlic, salt, pepper, parsley flakes (for garnish)

Low Amine: cream cheese, safflower oil
